Brined Turkey

2 gallons cold water
1 c salt
1 c brown sugar
2 oranges quartered
2 lemons quartered
6 sprigs of thyme
4 sprigs of rosemary

Use ½ c salt, ½ c brown sugar for every additional gallon of water.

Soak turkey for 4-24 hours. Remove turkey and rinse well under cold water. Dry and add salt, pepper and butter on outside of turkey. Stuff with onion, orange celery, bay and thyme and cook.
